Oreo Stuffed Chocolate Chip Cookies!

When I first saw this recipe here, I was a bit skeptical. I mean the cookies looked amazing, but I really dont like eating sweet stuff.


Ingredients:

  • 1 cup butter
  • 3/4 cup brown sugar
  • 1 cup white sugar
  • 2 large eggs
  • 1 tbsp. vanilla
  • 3.5 cups flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 cup chocolate chips
  • 14 oreo cookies
Directions:
  1. Preheat oven to 350.
  2. Cream sugars and butter. Add vanilla and eggs.
  3. In separate bowl mix flour, baking soda, and salt.
  4. Add it slowly to cream and sugar mix.
  5. Mix in chocolate chip cookies.
  6. Use an ice cream scoop and scoop cookie dough like this:
  7. Take an oreo. Put one piece of cookie dough on top and one on the bottom.  Seal edges By pressing and cupping your hands around them.
  8. They will look something like this
     9.  Bake for 10-15 minutes or until golden brown.

Chocolate Cake



Ingredients:
  • 1 2/3 cups flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 3/4 cups sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 1 cup buttermilk
  • 3 large eggs
  • 2 tbsp. vegetable oil
  • 3/4 tsp. vanilla

Directions:
  1. Pre-heat oven to 350F.
  2. Grease the pan you would like to use.
  3. In large bowl combine flour, cocoa powder, baking powder, baking soda, and salt.
  4. Stir in sugars.
  5. Beat in oil, buttermilk, eggs, and vanilla.
  6. Pour batter into pan.
  7. Bake 25-30 minutes.

Coffee Cake!

Hello!
I have been on a baking craze lately. I got this recipe from this amazing blog.
So I made a slight mistake while make it but it still turned out good! I didnt have instant coffee so I used ground coffee. Just make sure if you do use ground to make one extra strong cup minus the grounds. :-)


Ingredients:
  • 2 cups flour
  • 2 cups sugar
  • 1/4 tsp. salt
  • 1 cup butter
  • 1 cup extra strong coffee or 3 tbsp. instant coffee
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 tsp. baking soda
  • 2 tsps. vanilla
For the icing I just used the cream cheese frosting I used for the red velvet cake here.

Directions:
  1. Pre-heat oven to 350.
  2. Grease the pans you want to use.
  3. In large bowl mix sugar, flour, and salt.
  4. In a pot melt butter on medium-low heat.
  5. In the meantime prepare cup of coffee. Add the 3 tbsp. instant coffee to 1 cup boiling water.
  6. Once butter has melted add the cup of coffee.
  7. In small bowl mix buttermilk, eggs, baking soda, and vanilla.
  8. Pour the butter/coffee mixture into the flour mixture.
  9. Mix in egg mixture.
  10. Pour into pans.
  11. Bake for 20-25 minutes of until toothpick comes out clean from the center.
  12. Allow to cool then add the icing.

This cake has a strong coffee flavor so if you dont like coffee it might not be your thing, but if you do it definitely will be.

Buttermilk Pound Cake




Ingredients:

  • 1 cup margarine (or butter)
  • 3 cups sugar
  • 3 eggs
  • 3 cups flour
  • 1/4 tsp. baking soda
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • confectioners' sugar
Directions:
  1. Pre-heat oven to 325.
  2. Cream the sugar and margarine. 
  3. Add 1 egg at a time.
  4. In separate bowl mix flour and baking soda.
  5. Add buttermilk and flour alternatively.
  6. Add vanilla extract.
  7. Grease a 9.5 inch round pan.
  8. Add mixture.
  9. Bake for 70-80 minutes or until knife comes out clean when inserted in middle.
  10. Flip onto plate and sprinkle with powdered sugar.

If you have different flavored extracts you can add that too to add some flavor.

Red Velvet Cake



I used this recipe here. I adapted the frosting recipe a bit.

Ingredients:

  • 2.5 cups flour
  • 2 cups sugar
  • 1 tbsp. coca
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2 eggs
  • 1.5 cups oil
  • 1 cup buttermilk
  • 1 tbsp. white vinegar.
  • 1 tsp. vanilla
  • red food coloring*
*I used about a tablespoon of red gel food coloring. 
Directions:
  1. Pre-heat oven to 350.
  2. Grease a 9.5 inch round pan.
  3. Mix dry ingredients in large bowl.
  4. In smaller bowl beat the eggs, then add the remaining wet ingredients.
  5. Add the wet ingredients to the dry ingredients. 
  6. Beat until combined.
  7. Pour into pan.
  8. Bake for 30-40 minutes or until toothpick or knife comes out clean.
  9. Remove and allow to cool before frosting.
Frosting Ingredients:
  • 8 oz. cream cheese.
  • 3/4 cup butter
  • 1 tsp. vanilla
  • 3.5 cups powdered sugar
Directions:
  1. Allow cream cheese and butter to reach room temperature.
  2. Beat butter and cream cheese until creamy.
  3. Add vanilla.
  4. Add sugar in batches.

Notes:
In the future I would make less frosting because I had a lot leftover. I would probably only make 3/4 of the above recipe. I would also add less sugar.
The cake was really moist. If you want you can decrease the amount of oil you add by a little bit.

Teriyaki Shrimp and Pasta


Ingredients:
  • Shrimp (as much as you want, I used about 20. I also use the frozen raw type from costco)
  • Pasta (use whole-wheat if you want to be healthy)
  • 1/2 cup soy sauce
  • 1 tsp. ginger
  • 3 tsps. brown sugar
  • 2 tsp. powdered garlic*
*it is best to use fresh ginger fresh garlic.

Directions:
  1. Cook pasta as directed on box.
  2. Mix soy sauce, ginger, brown sugar, powdered garlic.
  3. Mix shrimp in teriyaki mixture.
  4. Heat some oil in a sauce pan.
  5. Add shrimp without the sauce.
  6. Once the shrimp becomes clear/pink on both sides pour the rest of the soy sauce in the pan.
  7. Let mixture simmer.
  8. Mix shrimp/sauce mixture and pasta.
  9. Serve and eat! :-)

Chocolate Chip-Vanilla Cake Cookies


I got this recipe from here.  I adapted it a bit, because I did not have eggs. 
Eggs serve different purposes in different foods. In cookies they add moisture, they help hold the cookies together, and help them puff up. So I improvised. :-)

Ingredients:

  • Vanilla Cake Mix (you can use any type of cake mix you would like)
  • 1/2 cup vegetable oil
  • 1 tsp. vegetable oil
  • 1 tsp. baking soda
  • 1/4 cup water
  • Half a banana 

Directions:
  1. Pre-heat oven to 350.
  2. Combine all ingredients.
  3. Drop on a pan by the spoonful.
  4. Bake for 10-12 minutes.
