Tandoori Chicken


Ingredients:

  • 1.5 tsp. salt
  • 1 tsp. chili powder
  • 1 tbsp. lemon juice
  • 2 tbsp. crushed garlic
  • 2 tbsp. chopped up garlic
  • 1 tbsp. paprika
  • 1 tsp. cumin 
  • 1 tsp. turmeric powder
  • 1 tsp. coriander powder
  • 1 tsp. garam masala
  • 1/2 cup yogurt
  • 2 tbsp. oil
  • 1 tsp. fenugreek leaves

Directions:
  • Preheat oven to 425.
  • Rub chicken with salt, chili,  and lime. Allow to sit for 15 minutes.
  • Mix the remaining ingredients in a small bowl.
  • Rub mixture on chicken. 
  • Place remaining mixture and chicken in pan and bake for 20-35 minutes.

It tastes best with fresh onions and naan (a special type of flat bread).

Whole Grain Banana-Cashew Muffins

Recipe adapted from Our Best Bites

Ingredients:

  • 1/2 cup all-purpose flour
  • 1 1/4 cup whole wheat flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 3/4 cup sugar
  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cup mashed banana
  • 1/3 cup plain yogurt (or sour cream)
  • 1 tsp. vanilla extract
  • 1/4 cup cashews chopped
  • 1/4 cup packed brown sugar

Directions:
  1. Preheat oven to 350.
  2. Mix the dry ingredients together (flours, baking soda, salt, cinnamon) in bowl and set aside. 
  3. Mix sugar, honey, and vegetable oil together in large bowl. 
  4. Add one egg in at time. Make sure to mix well.
  5. Add in mashed banana. 
  6. Add in yogurt and vanilla.
  7. Slowly add in dry ingredients.
  8. Add the batter to the muffin cups such that they are 2/3 full.
  9. In small bowl mix brown sugar and cashews and sprinkle some on each cup.
  10. Bake for 23-28 minutes.

You can use various types of nuts! The original recipe called for pecans.

I usually don't like to eat muffins, but these were really good! :-)
