Blueberry Crumble Pie




I made this pie to go along with the turkey.

Ingredients:
  • 1 6-oz (9 inch) Graham Cracker pie filling
  • 1 egg yolk
  • 21 oz blueberry pie filling
  • 1/3 cup flour
  • 1/4 cup sugar
  • 1/3 cup quick cooking oats
  • 3 tbsp. melted butter

Directions:
  1. Preheat oven to 375 F.
  2. Spread egg yolk on Graham cracker pie filling.
  3. Bake for 5 minutes.
  4. Pour filling into pie crust.
  5. Mix oats, flour, sugar, and butter.
  6. Spoon mixture over pie filling.
  7. Bake for 35 minutes or until golden brown.

You can probably make this with other pie fillings such as cherry.

Turkey

















This is my first try at turkey! I looked up a bunch of different recipes and combined the stuff I liked.


Ingredients:
- 1 cinnamon stick
-1 cup olive oil
-2 tsp. thyme
-1 tsp. rosemarry
-2 tsp. salt
-2 tsp. pepper
-2 tsp. basil
-2 tsp. sage
-2 tsp. ginger
-3 cloves garlic




Directions:

Cleaning:
  1. Clean out cavity.
  2. Rinse turkey with cold water and salt until water is clear.

Cooking:
  1. Preheat oven 375F.
  2. Mix thyme, rosemary, salt, pepper, basil, sage, ginger, garlic, and olive oil in bowl.
  3. Apply mixture to turkey. Try to get some of it under the skin.
  4. Place cinnamon in cavity.
  5. Place turkey in roast pot breast side down.
  6. Add 2 cups water.
  7. Cook for 2 hours covered.
  8. Cook for an additional 2 hours uncovered.
    Allrecipes.com says cook: until the internal temperature of the thickest part of the thigh measures 180 degrees F (82 degrees C).
Let stand for around 30 minutes.

Then carve and eat!

Cheesecake

The picture I have is not that great, so when I make more I will post.

Ingredients:
15 oz. Ricotta Cheese
1 1/2 c.sugar
2 T. flour
2 T. lemon juice
1 stick of butter (½ cup)
graham crackers (or two of those pans that already lined with graham crackers)
1-16 oz. Pkgs of cream cheese
4 eggs
2 T. cornstarch
2 T. vanilla
16 oz. Sour cream

Directions
1. Preheat oven to 350 degrees.
2. Break up graham crackers and strain to flour consistency. Butter 9 ¾" push up pan and coat with graham crackers. Do the same for the second pan. Don’t worry about this step if you are using the pre-made pans.
3. Melt butter and cool.
4. Separate egg yolks and whites. This is kind of tricky to do, so you can just call your mom to help like I do J
5. For the next few steps it might be easier if you had a cake mixer or your arms are going to get tired. Make sure you blend each item as you go along or you are going to have a mess at the end.
6. Blend cream cheese, and ¼ c. sugar.
7. Add ricotta cheese, and ¼ c. sugar.
8. Add egg yolks, one at a time, and ¼ c. sugar.
9. Add flour, lemon juice, vanilla, cornstarch, and ¼ c. sugar.
10. Add the rest of the butter, and ¼ c. sugar.
11. Add sour cream, and ¼ c. sugar.
12. Beat egg whites till foamy and fold in.
13. Pour batter into pans. Make sure to leave at least 1 cm between the batter and the top of the pan.
14. Bake for one hour.
15. Leave in the oven for two hours longer. This step helps avoid any cracks in the cheese cake so it will look pretty! J
16. Cool and refrigerate. Cheesecake tastes ten times better when cold.
17. Eat and ENJOY!

Cranberry Streusel Coffee Cake

Again, I got this from the book "Bake Sale." Thanks Manaar for giving it to me!



Ingredients:
-1 egg
-1/2 cup + 3 tbsp. sugar (divided)
-1/2 cup milk
-1 tbsp. vegetable oil
-1 tbsp. orange juice
-1 tsp. grated orange peel
-1.5 cups flour
-2 tsp. baking powder
-1/2 tsp. salt
-2 cups (8 oz) fresh cranberries
-2 tbsp. butter


Directions:



German Chocolate Cake

Hello!

I got this recipe from "Bake Sale."

Ingredients:
-1 package chocolate cake mix (18.25oz)
-1 cup water
-3 eggs
-1/2 cup vegetable oil
-14 oz can sweetened condensed milk
-3 tbsp. butter
-1 egg yolk
-1/3 cup chopped pecans
-1/3 cup flaked coconut
-1 tsp. vanilla extract




Directions
  • Preheat oven to 350F.
  • Grease baking pan.
  • In large bowl: mix cake mix, water, 3 eggs, oil, and 1/3 cup condensed milk.
  • Pour into pan.
  • Bake 40 to 45 minutes.
  • In small saucepan over medium heat, combine remaining condensed milk, butter, and egg yolk.
  • Cook and stir until thickened. (6 minutes)
  • Add pecans, coconut, and vanilla.
  • Spread over warm cake.

Banana Nut Bread

This is what happens when you are snowed in for a week. Well this is what happens when I am snowed in for a week.
I got the recipe from a friend.


Ingredients:
-1/2 cup butter
-1 cup sugar
-3 eggs
-3 bananas
-2 cups flower
-1 tsp. vanilla
-1/2 tsp. salt
-1 tsp. baking soda
-1 tsp. cinnamon
-1/2 cup raisins
-1/2 cup walnuts






Directions
  • Preheat oven 350F.
  • Grease the loaf pan.
  • Mash the bananas.
  • Mix all ingredients.
  • Place in loaf pan.
  • Bake for 1 hour to 1 hour and 15 minutes.

Konafa

This is one of my favorite desserts! You can't find it a lot here and when you do it is mad expensive.



Ingredients:
-½ cup butter
-1lb konafa
-½ cup milk
-1 lb ricotta cheese
-½ cup veg oil









Directions:
  • Defrost dough
  • Preheat oven to 450F
  • In large bowl mix dough, butter, and vegetable oil. Shred the dough as you mix.
  • Split the dough in half.
  • Place the first half in the pan you want to cook in it. Be sure to press it down and that you can't see the pan through the dough.
  • Mix the cheese and the milk.
  • Using your hands spread the cheese/milk mixture over the dough.
  • Place the remaining dough on top of the mixture.
  • Cook for 25 minutes.
  • Remove from the oven and sprinkle syrup over the entire konafa.
Syrup

Ingredients:
  • 2 cups sugars
  • 1 cup water
  • 1 tbsp. lemon juice
  • 1 tbsp. rose water
Directions:
  • Place sugar and water in saucepan on medium high.
  • Continue to stir the mixture until the sugar dissolves.
  • When the mixture boils add lemon juice.
  • Lower the heat to medium low and leave for ten minutes.
  • Turn off the heat and add the rose water.
Enjoy!

Kofta

Ingredients:
  • 1 lb ground beef
  • ½ tsp salt
  • ¼ tsp peper
  • 1 tsp spice
  • 3 tbsp bread crumps
  • 1 tbsp olive oil
  • 1 tbsp yogurt
  • 1 tsp. ginger powder
  • 1 tsp. basil leaves

Directions:
  • Preheat oven to 375 F.
  • Mix ingredients. 
  • Cook for 20 minutes covered.
  • Broil for 10-15 minutes.

Chocolate Frosted Peanut Butter Cake!

I got this recipe from the book "Bake Sale" that a good friend got for me.
I actually dont like eating cakes, but I really liked this one.
Ingredients:
-1/3 cup peanut butter (chunky or creamy)
-1/3 cup vegetable oil or butter
-1/2 cup sugar
-1/4 cup brown sugar
-2eggs
-1 tsp. vanilla
-1.75 cups flour
-1.5 tsps. baking powder
-1/4 tsp. salt
-1.25 cups milk
-peanut butter chocolate frosting
Directions:
  • Preheat oven to 350 F
  • Mix peanut butter and oil until smooth.
  • Mix in both sugars until well mixed
  • Mix in eggs and vanilla
  • In a separate bowl mix: flour, baking powder, and salt.
  • Add flour mixture to peanut butter, alternating with the milk. End with the flour mixture.
  • Pour batter into greased pan.
  • Baked 23-25 minutes.
Peanut Butter Chocolate Frosting:

Ingredients:
-2 cups powdered sugar
-1/6 cup unsweetened cocoa powder
-3 tbsp. milk
-2 tbsp. creamy peanut butter

Directions:
  • Combine all ingredients in bowl
  • Mix until smooth
  • Add milk to until you get the desired consistency
Note: if you dont have powdered sugar, you can use a coffee grinder. It is still does not come out as smooth, but still tastes good.


Bil hana!

White sauce chicken lasagna

I got this recipe from allrecipes.com. I changed some things here and there.
















Ingredients:
  • 9 lasagna noodles
  • 1/2 cup butter
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 2 cups chicken broth
  • 1 1/2 cups milk
  • 4 cups shredded mozzarella cheese, divided
  • 1 cup grated Parmesan cheese, divided
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground black pepper
  • 2 cups ricotta cheese
  • 2 cups cubed, cooked chicken meat
  • 1 tablespoon chopped fresh parsley
  • 1/4 cup grated Parmesan cheese for topping
Directions:
  • Preheat oven to 350 degrees F.
  • Bring a large pot of water to boil.
  • Cook lasagna noodles in pot for about 8 to 10 minutes.
  • Remove noodles and rinse with cold water. It helps to have a large pan set up to put the cooked lasagna noodles on because you can only cook a couple at a time.
  • Melt the butter in a large saucepan over medium heat. Cook the onion and garlic in the butter until tender, stirring frequently. Stir in the flour and salt, and simmer until bubbly. Mix in the broth and milk, and boil, stirring constantly, for 1 minute. Stir in 2 cups mozzarella cheese and 1/4 cup Parmesan cheese. Season with the basil, oregano, and ground black pepper. Remove from heat, and set aside.
  • Spread 1/3 of the sauce mixture in the bottom of a 9x13 inch baking dish. Layer with 1/3 of the noodles, the ricotta, and the chicken. Arrange 1/3 of the noodles over the chicken, and layer with 1/3 of the sauce mixture, spinach, and the remaining 2 cups mozzarella cheese and 1/2 cup Parmesan cheese. Arrange remaining noodles over cheese, and spread remaining sauce evenly over noodles. Sprinkle with parsley and 1/4 cup Parmesan cheese.
  • bake 35-40 minutes

If you have frozen garlic bread you can just make that.
If you don't you can make some at home.
All you need is:
  • White toast
  • Dried parsley
  • Powdered garlic
  • Salt
  • Butter
Spread some butter on the toast. Then sprinkle the dried parsley, powdered garlic, and salt on it. Cook in oven for about 5-10 minutes.

And as usual enjoy your meal!

Baked "fried" chicken

This recipe is for baked chicken that has the crispiness of fried chicken but is healthy!














Ingredients:

  • 2 lb. Chicken breast (you can also use other parts, but this works best with chicken breast)
  • 2 cups Sour cream
  • 2 cups crushed Corn flakes
  • powdered garlic
  • powdered ginger
  • basil
  • fajita seasoning
  • Any type of seasoning you would like

Directions:
  • Mix the sour cream 1 tsp. powdered ginger, 1 tsp. powdered ginger, 1 tsp. fajita seasoning
  • After cleaning the chicken, coat both sides with the sour cream mix.
  • Place in the oven for about 20 minutes. This helps minimize the mess when you add the cornflake mixture.
  • Crush the cornflakes until they are almost like a powder
  • Mix the cornflakes with any type of seasoning you would like. I added salt, powdered garlic, powdered ginger, basil, fajita seasoning, and some chili powder.
  • Take the chicken out of the fridge and coat with the cornflake mix.
  • Place chicken in a 375F preheated oven.
  • Bake for about an hour.
